Fried Plantain Balls

Ingredients

  • Over Ripe plantain
  • 2 Eggs
  • Spring onions
  • Red onions
  • Carrots
  • Mashed green peas
  • Olive oil
  • Flour
  • Parsley for garnish

Method

Mash plantain till pasty or place in a food processor to blend, the paste doesn’t have to be completely smooth. Do not add any water, roll plantain between your hands with a little bit of flour to reduce stickiness, then in-between the balls, add slightly fried vegetables and then roll into ball, use eggs to glaze balls before frying. Garnish with parsley and serve hot.
