#ValsDayRecipe: Berry & White Chocolate pudding

 

Today is Valentine’s day and it is perfect time to show love to that special person. Have you thought of trying out a new recipe that you would both cherish?

That seems like a good idea. The Berry and White chocolate microwave pudding would fit the occasion perfectly.

You would need the following:

100g butter

100g soft light brown sugar

100g self-raising flour

2 eggs

45ml (3tbsp) milk

85g white chocolate drops

300g frozen mixed berries

Method:

  1. Lightly butter a  20cm microwave cake dish.
  2. Using an electric hand whisk, beat together the butter, sugar, flour, eggs and milk until light and fluffy (about 2-3 minutes).
  3. Fold through the white chocolate drops and most of the berries.
  4. Pour the mixture into the prepared dish, then microwave on high for 5-6 minutes, until set and dry on top.
  5. Leave to stand for 5 minutes before dusting with icing sugar and serving topped with the remaining berries.
