Plantain Fritata: Breakfast idea for the weekend

Weekends are basically the perfect time to prepare yummy breakfast as we have all the time, plantain fritata is a goal you need to try out.

Recipe for plantain fritata

Ripe plantain

Bell pepper

Yellow pepper

Sausage

Eggs

Salt

Seasoning of your choice

Olive oil

Onion

Procedure :

Cut and dice your plantain into desired shape.

Add a pinch of salt and deep fry your plantain.

Cut your sausage, pepper, into preferred shapes and set aside.

Add little oil to a frying pan, add your onion (diced), allow sizzle for a minutes, add some of your peppers, add your sausage and then seasoning.

Allow it seat for few minutes before you set it aside.

Break eggs into a bowl, add your seasoned mixture into the eggs and stir.

Pour into you frying pad after spreading some olive oil on it or into a plate for your oven.

Add the already fried plantain on top with some spray of pepper to give it a popping color.

Fry or bake and after few minutes it’s ready for consumption.

You can cut out a piece and add some slices of cucumber to garnish.

Serve with any preferred beverage or coffee.

Breakfast is ready and it’s yummy.
