Banana Bread Recipe
Banana bread may be made with a mixer or a fork, in a loaf pan or a muffin tin, whenever you have a few soft and freckled bananas.
Ingredients:
– 3 ripe very very ripe bananas
– 1 teaspoon vanilla extract
– 1/2 cup melted butter/ oil
– 1/2 cup white sugar (3/4 cup if you like it very sweet or if using medium ripe bananas)
– 1/2 cup buttermilk or unsweetened yoghurt
– 2 medium-sized eggs
– 1/4 cup peanut butter
– 1½ cup all-purpose flour (200g)
– 1 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1/2 teaspoon salt
– 1 teaspoon nutmeg
– 1/4 cup peanuts
Increase baking time to 45 minutes to 50 minutes if using a single loaf pan.
To make buttermilk, mix 1/2 cup of milk with 11/2 teaspoon white vinegar or lemon. Allow to sit for 10 minutes, milk will curdle. Mix and use.
