Plantain Fritatas : A breakfast delight

Most people love the taste of plantain. Truth is, plantain is very versatile. It can be served as breakfast, lunch or even dinner. You can make appetizers and even desserts from plantain. You can add cheese if you desire.

Plantain fritatas is one of the meals you can make with plantains. You can infuse Plantain fritatas into your breakfast menu. It is very easy to make and can be modified to your taste. Some people eat the plantain fritatas with sausages or chicken or even with shrimps making it a wholesome nutritious meal.

So experiment with the plantain fritatas to suit your taste buds and ensure that you make it for breakfast soon.

The Ingredients needed (Serves 1)

½ Plantain Finger

1 egg

½ tomato

½ pepper

Handful of chopped Onions

Handful of chopped Vegetables of your
choice

1 tablespoon of oil

Seasoning Cubes

Cooking Method

-Start with greasing your pan and line it with your sliced plantain.

-Then chop your vegetables;

-Fill the pan with the vegetables and sprinkle seasoning over the vegetables

-Cover the vegetables with the remaining plantain. (If you would like to add cheese, this would be the step to incorporate that)

-Whisk your egg and pour over the plantain and vegetables and place in the oven to bake on low heat about 325F for 10-15 minutes.

Serve your plantain fritatas hot!

Please note that if you do not have an oven, you could pre-fry your plantain and when you layer the rest of the food items, you should cook on very low
heat and then cover the pan.
