Healthy Mac And Beef Made Easy

- Healthy Beef & Veggie Macaroni Bake
Ingredients (2–3 servings):
” 150g whole wheat macaroni
- 200g lean ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped bell peppers (any colour)
- 1 cup spinach or kale
- 1/2 cup low-fat Greek yogurt
- 1/4 cup grated parmesan or reduced-fat cheese
” 1 tsp olive oil - Salt, pepper, paprika to taste
Instructions:
- Cook macaroni according to package directions, drain.
- Heat olive oil in a pan, sauté onion and garlic until fragrant.
- Add ground beef, cook until browned. Season with salt, pepper, paprika.
- Stir in bell peppers and spinach; cook 2–3 mins until softened.
Remove from heat, stir in Greek yogurt. - Mix beef-veggie mixture with macaroni in a baking dish. Top with cheese.
- Bake at 180°C (350°F) for 10–12 minutes until lightly golden.
