How to prepare garden egg sauce

With Garden eggs in season, you can transform the fruit to a palatable meal. A typical Nigerian dish that is easy to prepare with garden egg is the Garden egg sauce.

It can be eaten with boiled half-ripe plantain or yam or even rice. The fiber from the garden egg is just amazing and does wonders for our body. if you consider the white garden eggs too sweet then you could opt for the greener ones. You could try varieties by substituting garden eggs with aubergines. Below are ingredients for making Garden egg sauce:

-10 pieces of white Garden Eggs

-6 pieces Tatashe (big red pepper)

-Scotch Bonnet Pepper to taste

-Handful Smoked Prawns

-1/2 cup Smoked Fish

-Seasoning to taste

-1/2 cup Vegetable Oil

-Curry Leaves (patmenger)

-Salt to taste

How to prepare Nigerian Garden Egg Sauce

Start by washing and cutting the garden eggs into small pieces.Then you wrap in foil and steam in water till very soft. Afterwhich you mash and set aside.You could either chop the garden eggs into small cubes or mash them. I prefer the latter. The next thing would be to blend the peppers. Then you heat the oil, fry the onion then the pounded pepper. Add the rinsed prawns, fish and seasoning. Add about 1/4 cup or less of water to help cook the fish if hard or use less water if the fish is soft. Then fry the sauce till dry, taste and correct the seasoning. Finally, add the garden egg and some curry leaves, stir well and cook for about 5 minutes

Serve hot with boiled half ripe plantain/yam or rice.
