Lunch box Idea for school children: Stir Fried vegetables with noodles
Children are back to school and this is the time parents struggle with food to put in their children lunch box.
This lunch box idea presents a nutritious way to feed children noodles.

Ingredients
Two packs of instant noodles
Carrot 2 large
Green peppers. 1 medium
Red peppers. 1 medium
Yellow pepper. 1 medium
Spring onions. 5 to six bulbs and stalk
Onions. 1 medium
Garlic. 2 fingers
Sausages. 3 fingers
Sweet corn. Half cup
Vegetable oil. Two table spoon

How to prepare
In a small pot, add water and per boil the instant noodles half done without the seasoning. Pour in a sieve to drain.
In a different pan, (non stick pan preferably) add one full table spoon of vegetable oil, add chopped garlic, chopped onions and stir. Add the noodles seasoning in place of salt and seasoning cubed.
Add chopped spring onions, chopped green, yellow and red Peppers, add carrots sweet corn and cubed sausages. Stir and fry until its half done. Then add the half boiled noodles and mix together.
Serve hot for lunch box or for lunch at home.
Note: in case you don’t have red and yellow peppers, don’t worry, chop red long chili pepper popularly called shombo in Nigeria to give the red color. You can also add chopped tomatoes to this recipe, just make sure you add the tomatoes immediately after onions and garlic before other veggies, so that it can cook well and get rid of the raw taste.
